We chose to press our harvests at the Saint-Vincent Cooperative in our village because the investment in buildings to install a press and vat room was too costly for our estate.
Our wine-making Cooperative, chaired by Philippe, is a small structure that makes wine for just 4 members, so we benefit from a wine-making process that meets everyone's needs; the blends of our vintages are defined together with the help of an oenologist and an excellent cellar master.
We collect our bottles after bottling, which means 6 months after the harvest, to allow them to age in our cellar and finalise the remuage, disgorgement and packaging operations at our premises in Verneuil.
An HVE - VDC certified vineyard
Trained as a viticultural technician, Philippe has opted for integrated viticulture, the practice of using weedkillers and treatments wisely.
Our daughters, Justine and Laurène, are also involved in the operation. Justine's environmental studies enabled her to put together the application for the HVE (Haute Valeur Environnementale) and VDC (Viticulture Durable de la Champagne) certifications.
We use grass cover on some plots and cultivate the soil on others. These different working techniques preserve our environment so that we can serve you healthy, high-quality products in Verneuil.
Our vineyards located in Verneuil and around Dormans are planted on two types of soil: limestone for finesse and clay-limestone for the roundness of the wines. Oceanic and continental, our climate provides vines with a regular supply of water and ideal sunshine in summer. The 3 Champagne grape varieties are planted in the following proportions: 70% Pinot Meunier, 15% Pinot Noir and 15% Chardonnay.
